Joseph Lassaga, Executive Chef at Le Bistro Chez Michel, is from the Basque country in France and was trained in Biarritz.He started his cooking  career in Paris, moved to Vancouver in 1979 and started working at  Chez Michel in West  Vancouver.  He is well known and  respected  for his Bouillabaisse,  seafood dishes and his depth of knowledge and range in all aspects of French cuisine.
